So of late I've been doing one pot meals for dinner. What is a one pot meal and why are they kind of the best thing to make? That's easy to explain and here we go.

One pot meals are exactly what it sounds like a meal that is cooked in one pot, OK maybe 2 pots of you add pasta or rice into the mix. You can use pot for complete onto of the stove cooking or a very good stove top to oven pot like lodge or Le Creuset pot (which I love).

There are many great cookbooks, websites and even blogs out there to create this quick meals. Even some of your slow cooker or aka crock-pot meals are one pot meals and you probably didn't even know it. Surprise you've made a one pot meal!

I like making them when the weather here in Washington isn't the best...but let's be honest in the state of Washington when is the weather the best? So I am going to enclose some links to websites that have one pot meals and hope you try them, and please let me know what you liked about recipe you tried and what tweaks you made to the recipe.
